Sustainable Business Practices
At Seva, a vegetarian cuisine restaurant in Ann Arbor, recycling has been a company standard for almost 30 years. In fact, the restaurant was one of the first businesses to participate in the City of Ann Arbors commercial recycling collections. In 2002 and 2003, Seva participated in the City of Ann Arbors pilot composting program. They were able to collect roughly 2/3 of their former waste as compost. Employees are the driving force behind this enduring program, and need little incentive to participate. They are encouraged to offer ideas and voice concerns about Seva's operations through logbooks located behind the bar and in the kitchen. Employees are constantly finding new ways to recycle and reuse, so much so that the owner claims he has a hard time keeping up with them! The restaurant constructed a shed to store their recyclable materials, and a few years ago designated two of its three garbage dumpsters for cardboard recycling only. Since that time, the restaurant has recycled more material than it has thrown away. Seva participates in a waste oil recovery program, and recycled-content products are purchased whenever possible. Every new employee's orientation includes training on the restaurant's recycling policy and program. On top of all that, Seva donates 40-60 meals each week to the Food Gathers food rescue program.
